- 2 pounds Lamb, cubed

- 1 teaspoon Salt
- 1 tablespoon Garam masala
- 1 teaspoon Cumin powder
- 1 teaspoon Coriander powder
- 1/2 teaspoon Turmeric powder
- 1 teaspoon Red chili powder
- for garnish Fresh cilantro, chopped

Instructions
- Heat the oil in a large pan over medium heat. Once hot, add the finely chopped onions and sauté until they turn golden brown, stirring occasionally.
- Stir in the minced garlic and grated ginger. Cook for an additional minute until fragrant.
- Increase the heat to medium-high and add the lamb cubes. Sear the lamb until browned on all sides, about 5-7 minutes.
- Reduce the heat to medium and add the pureed tomatoes, yogurt, red chili powder, turmeric powder, coriander powder, cumin powder, garam masala, and salt. Stir well to combine all ingredients.
- Cover the pan and let the curry simmer on low heat for about 1 hour, stirring occasionally, until the lamb becomes tender and the flavors meld beautifully.
- Once cooked, taste and adjust seasoning if necessary. Garnish with fresh chopped cilantro before serving.
