Hearty Lamb Soup

- 1.5 pounds, cut into 1-inch cubes Lamb shoulder

Instructions
- In a large pot, heat the olive oil over medium heat. Once hot, add the lamb cubes and sear until browned on all sides, about 5-7 minutes.
- Add the chopped onion, sliced carrots, sliced celery, and minced garlic to the pot. Sauté for 5 minutes, or until the vegetables begin to soften.
- Stir in the diced potatoes, canned tomatoes (with juice), beef broth, bay leaves, dried rosemary, dried thyme, salt, and pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the lamb is tender and the flavors meld beautifully.
- After simmering, remove the bay leaves and taste the soup. Adjust seasoning with more salt and pepper if necessary.
- Serve hot, garnished with fresh herbs if desired, and enjoy the comforting flavors.
