Lau Bo, also known as Vietnamese Beef Hot Pot, is a flavorful and comforting dish made with thinly sliced beef, an assortment of vegetables, and a fragrant broth.
Ingredients

- Sugar (1 tablespoon)
- Chili peppers (2, sliced)
- Garlic (4 cloves, minced)
- Ginger (1-inch piece, sliced)
- Soy sauce (2 tablespoons)
- Fish sauce (2 tablespoons)
- Lime wedges (4)
- Cilantro (1/4 cup, chopped)
- Green onions (4, sliced)
- Rice noodles (8 ounces, cooked)
- Mushrooms (8 ounces, sliced)
- Carrots (2, thinly sliced)
- Bok choy (4 baby bok choy, halved)
- Napa cabbage (1/2 head, sliced)
- Firm tofu (8 ounces, cubed)
- Shrimp (1/2 pound, peeled and deveined)
- Beef sirloin (1 pound, thinly sliced)
- Beef broth (6 cups)
Instructions
- In a large pot, bring the beef broth to a boil.
- Add the ginger, garlic, chili peppers, fish sauce, soy sauce, sugar, and salt. Simmer for 15 minutes to infuse the broth with flavors.
- Prepare a platter with the sliced beef, shrimp, tofu, vegetables, and cooked rice noodles.
- Place the pot of broth in the center of the dining table and set up a portable stove or hot plate.
- Each person can then cook their desired ingredients in the hot pot by dipping them into the simmering broth until cooked to their liking.
- Serve the cooked ingredients with a variety of dipping sauces, such as soy sauce, hoisin sauce, and chili sauce.
- Garnish with sliced green onions, chopped cilantro, and lime wedges.
