Lau Thai - Authentic Thai Hot Pot

Ingredients

- Napa cabbage
- 1, cut into chunks
- Rice noodles

Instructions
- Bring the chicken broth to a boil in a large pot.
- Add the crushed lemongrass, galangal slices, kaffir lime leaves, chopped Thai chili peppers, fish sauce, and sugar into the boiling broth. Lower the heat and let it simmer for 10-15 minutes, allowing the flavors to infuse.
- While the broth is simmering, prepare your dipping sauces and set them aside in small bowls.
- Arrange the shrimp, squid, fish balls, tofu cubes, sliced mushrooms, and chunks of Napa cabbage attractively on a serving platter.
- Set up a portable stove at the center of your dining table and place the hot pot on it. This is where the magic happens!
