Chicken broth

Instructions

  1. Bring the chicken broth to a boil in a large pot.
  2. Add the crushed lemongrass, galangal slices, kaffir lime leaves, chopped Thai chili peppers, fish sauce, and sugar into the boiling broth. Lower the heat and let it simmer for 10-15 minutes, allowing the flavors to infuse.
  3. While the broth is simmering, prepare your dipping sauces and set them aside in small bowls.
  4. Arrange the shrimp, squid, fish balls, tofu cubes, sliced mushrooms, and chunks of Napa cabbage attractively on a serving platter.
