Ingredients
- 1 cup, chopped Dried apricots
- 1 cup, chopped Dried plums (prunes)
- 1 cup, chopped Dried cherries
- 2 cups Water
- 1/2 cup (adjust to taste) Sugar
- 2 tablespoons, freshly squeezed Lemon juice
- 1/2 teaspoon Ground cinnamon

Instructions
- In a medium saucepan, combine the chopped dried apricots, plums, cherries, and water. Bring to a boil over medium heat.
- Once boiling, reduce the heat and let the mixture simmer for 10 minutes, stirring occasionally, until the fruits soften.
- Remove from heat and allow the mixture to cool slightly for about 5 minutes.
- Transfer the cooled fruit mixture to a blender or food processor. Blend until smooth, ensuring there are no chunks remaining.
- Return the smooth mixture to the saucepan. Add sugar, lemon juice, and ground cinnamon. Stir well to combine all ingredients.
- Cook over low heat for an additional 5 minutes, stirring constantly to prevent sticking, until the mixture thickens slightly.
- Line a baking sheet with parchment paper, ensuring it covers the edges for easy removal. Pour the fruit mixture onto the parchment and spread it evenly with a spatula, aiming for a thickness of about 1/4 inch.
- Place the baking sheet in a cool, dry area, away from direct sunlight. Allow the mixture to dry for 2-3 days, flipping it halfway through, or until it becomes firm and leathery to the touch.
- Once fully dried, cut the Lavashak into strips or squares using kitchen scissors or a sharp knife.
