
Lavender and Honey Roasted Chicken

Ingredients
- Lemon (1, sliced)
- Black pepper (1/2 teaspoon)
- Salt (1 teaspoon)
- Garlic (4 cloves, minced)

- Lavender (2 tablespoons, dried)
- Chicken (1 whole, about 4 pounds)
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, combine the dried lavender, honey, olive oil, minced garlic, salt, and black pepper.
- Place the chicken in a roasting pan and rub the lavender and honey mixture all over the chicken, including under the skin.
- Stuff the cavity of the chicken with the lemon slices.
- Roast the chicken in the preheated oven for about 1 hour, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Remove the chicken from the oven and let it rest for 10 minutes before carving.
