Authentic Lebanese Baba Ghanoush
Baba Ghanoush is a vibrant staple of Lebanese cuisine, a luxuriously creamy dip bursting with the smoky flavor of roasted eggplant beautifully complemented by the tanginess of lemon and the rich, nutty essence of tahini. Ingredients
- 1 packet Pita bread
- 2 tablespoons, for garnish Pomegranate seeds
- 2 tablespoons, finely chopped for garnish Fresh parsley
- 1 teaspoon, or to taste Salt
- 3 tablespoons Extra virgin olive oil
- 2 tablespoons Fresh lemon juice
- 2 cloves, minced Garlic
- 1/4 cup Tahini
- 2 large Eggplant

Instructions
- Preheat the oven to 400°F (200°C).
- Using a fork, prick the eggplants all over. Place them on a baking sheet and roast for 30-40 minutes, or until the skin is charred and the flesh is soft.
- Remove the eggplants from the oven and let them cool. Once cooled, gently peel off the skin and discard.
- In a food processor, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Process until the mixture is smooth and creamy.
- Transfer the baba ghanoush to a serving bowl. Drizzle a little olive oil over the top and garnish with chopped parsley and pomegranate seeds.
- Serve your authentic Lebanese baba ghanoush with warm pita bread or your favorite dipping vegetables.
Tips
- For a smokier flavor, you can grill the eggplants over an open flame before roasting. Add a drizzle of pomegranate molasses on top for an extra tangy sweetness.
