Ingredients

Original recipe serves 4

Pita bread
1 packet
Pomegranate seeds
2 tablespoons, for garnish
Fresh parsley
2 tablespoons, finely chopped for garnish
Salt
1 teaspoon, or to taste
Extra virgin olive oil
3 tablespoons
Fresh lemon juice
2 tablespoons
Garlic
2 cloves, minced
Tahini
1/4 cup
Eggplant
2 large

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Using a fork, prick the eggplants all over. Place them on a baking sheet and roast for 30-40 minutes, or until the skin is charred and the flesh is soft.
  3. Remove the eggplants from the oven and let them cool. Once cooled, gently peel off the skin and discard.
  4. In a food processor, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Process until the mixture is smooth and creamy.
  5. Transfer the baba ghanoush to a serving bowl. Drizzle a little olive oil over the top and garnish with chopped parsley and pomegranate seeds.
  6. Serve your authentic Lebanese baba ghanoush with warm pita bread or your favorite dipping vegetables.

Tips

  • 💡 For a smokier flavor, you can grill the eggplants over an open flame before roasting. Add a drizzle of pomegranate molasses on top for an extra tangy sweetness.
