Instructions
- Preheat your oven to 375°F (190°C). Arrange the pita triangles on a baking sheet and bake for 8-10 minutes, or until golden and crispy. Allow to cool before adding to the salad.
- In a large salad bowl, combine the chopped romaine lettuce, diced cucumber, tomatoes, red bell pepper, red onion, radishes, chopped mint leaves, and chopped parsley leaves.
- In a separate small bowl, whisk together the sumac, lemon juice, extra virgin olive oil, and salt until well combined to create the dressing.
- Pour the dressing over the salad and toss gently to combine, ensuring all the vegetables are well coated.
- Add the toasted pita bread pieces to the salad and toss again, allowing the bread to absorb some of the dressing.
- Let the salad sit for about 5 minutes to allow the flavors to meld together before serving.
- Serve the fattoush salad chilled or at room temperature as a refreshing side dish or as a light main course.
Tips
- For added flavor, consider grilling the vegetables before adding them to the salad.
- You can substitute the pita bread with whole wheat or gluten-free versions if desired.
- Feel free to add other seasonal vegetables like carrots or radicchio for extra color and crunch.
