Traditional Lebkuchen Cookies
Celebrate the festive season with Traditional German Lebkuchen Cookies. These delightfully spiced Christmas cookies are loaded with various aromatic spices, candied citron, and hazelnuts. Not quite gingerbread, these treats have a unique and mouth-watering flavor profile that is sure to light up your taste buds. They are a little sweet, a little spicy, and entirely irresistible.
Ingredients
- Chopped hazelnuts
- 1/2 cup
- Chopped candied citron
- 1/2 cup
- Ground nutmeg
- 1/2 teaspoon
- Ground allspice
- 1/2 teaspoon
- Ground cloves
- 1/2 teaspoon
- Ground cinnamon
- 1 teaspoon
- Baking soda
- 1 teaspoon
- All-purpose flour
- 2-1/2 cups
- Lemon zest
- 1 teaspoon
- Egg
- 1
- Brown sugar
- 1/2 cup
- Molasses
- 1/2 cup
- Honey
- 1/2 cup
Instructions
- In a medium saucepan, stir together the honey and molasses. Bring the mixture to a boil over medium heat, then remove from heat.
- Stir in the brown sugar, egg, lemon zest, cinnamon, cloves, allspice, and nutmeg into the honey and molasses mixture until well combined.
- In a large mixing bowl, combine the flour and baking soda. Gradually add the molasses mixture into the flour, stirring well after each addition.
- Fold in the chopped candied citron and hazelnuts into the dough.
- Cover the dough and let it chill overnight in the refrigerator.
- Preheat your oven to 350°F (175°C) and grease your cookie sheets or line them with parchment paper.
- Take a small amount of dough at a time, roll it out on a lightly floured surface to about 1/4 inch thickness. Cut the dough into small rectangles and place them about 1 inch apart on the prepared cookie sheet.
- Bake the cookies in the preheated oven for about 10 to 15 minutes, or until no imprint remains when touched lightly.
- Let the cookies cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.
Tips
- For a deeper flavor, store the cookies in an airtight container with a cup of orange or apple for a few days to mellow. They also freeze well.
