Ingredients

Leeks
2 large, sliced
Mushrooms
8 ounces, sliced
Garlic
3 cloves, minced
Ginger
1 tablespoon, grated
Cooking oil
2 tablespoons
Soy sauce
3 tablespoons
Sesame oil
1 tablespoon
Rice vinegar
1 tablespoon
Honey
1 tablespoon
Cornstarch
1 tablespoon
Water
3 tablespoons
Salt
to taste
Pepper
to taste
Green onions
2, sliced (for garnish)
Toasted sesame seeds
1 tablespoon (for garnish)

Instructions

  1. In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, cornstarch, and water until smooth. Set aside to allow the cornstarch to dissolve.
  2. Heat the cooking oil in a large skillet or wok over medium-high heat.
  3. Add the sliced leeks and mushrooms to the skillet. Stir fry for 5-6 minutes, or until they start to soften and release their moisture.
  4. Add the minced garlic and grated ginger to the skillet and stir fry for another 1-2 minutes, until fragrant.
  5. Pour the prepared sauce over the vegetables in the skillet and stir fry for an additional 2-3 minutes, or until the sauce thickens and coats the vegetables evenly.
  6. Season the stir fry with salt and pepper to taste.
  7. Remove from heat and garnish with sliced green onions and toasted sesame seeds.
