
Leek and Mushroom Stir Fry

Ingredients
- Toasted sesame seeds (1 tablespoon (for garnish))
- Green onions (2, sliced (for garnish))
- Salt and pepper (to taste)
- Cooking oil (2 tablespoons)
- Water (1/4 cup)
- Cornstarch (1 teaspoon)
- Honey (1 tablespoon)
- Rice vinegar (1 tablespoon)
- Sesame oil (1 tablespoon)
- Soy sauce (2 tablespoons)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Mushrooms (8 ounces, sliced)
- Leeks (2 medium, sliced)
Instructions
- In a small bowl, whisk together soy sauce, sesame oil, rice vinegar, honey, cornstarch, and water to make the sauce.
- Heat cooking oil in a large skillet or wok over medium-high heat.
- Add the leeks and mushrooms to the skillet and stir fry for 5-6 minutes, until they start to soften.
- Add the minced garlic and grated ginger to the skillet and stir fry for another 1-2 minutes.
- Pour the sauce over the vegetables in the skillet and stir fry for an additional 2-3 minutes, until the sauce thickens and coats the vegetables.
- Season with salt and pepper to taste.
- Remove from heat and garnish with sliced green onions and toasted sesame seeds.
- Serve hot with steamed rice or noodles.
