- 8 ounces, sliced
- Garlic
- 3 cloves, minced
- Ginger
- 1 tablespoon, grated
- Cooking oil
- 2 tablespoons
- Soy sauce
- 3 tablespoons
- Sesame oil
- 1 tablespoon
- Rice vinegar
- 1 tablespoon
- Honey
- 1 tablespoon
- Cornstarch
- 1 tablespoon
- Water
- 3 tablespoons
- Salt
- to taste
- Pepper
- to taste
- Green onions
- 2, sliced (for garnish)
- Toasted sesame seeds
- 1 tablespoon (for garnish)
Instructions
- In a small bowl, whisk together the soy sauce, sesame oil, rice vinegar, honey, cornstarch, and water until smooth. Set aside to allow the cornstarch to dissolve.
- Heat the cooking oil in a large skillet or wok over medium-high heat.
- Add the sliced leeks and mushrooms to the skillet. Stir fry for 5-6 minutes, or until they start to soften and release their moisture.
- Add the minced garlic and grated ginger to the skillet and stir fry for another 1-2 minutes, until fragrant.
- Pour the prepared sauce over the vegetables in the skillet and stir fry for an additional 2-3 minutes, or until the sauce thickens and coats the vegetables evenly.
- Season the stir fry with salt and pepper to taste.
- Remove from heat and garnish with sliced green onions and toasted sesame seeds.
