- 8, soaked in water for 20 minutes Wooden skewers
- 500g, peeled and deveined Prawns
- 2 tablespoons Olive oil
- 2 tablespoons, finely chopped Fresh dill
- 2 tablespoons, finely chopped Fresh parsley
- 2 cloves, minced Garlic
- 1, zested and juiced Lemon
- To taste Salt

Instructions
- In a mixing bowl, combine the lemon juice, lemon zest, minced garlic, chopped parsley, chopped dill, olive oil, salt, and pepper to create the marinade.
- Add the prawns to the marinade, ensuring they are evenly coated. Allow them to marinate in the refrigerator for at least 10 minutes, but no longer than 30 minutes to prevent the lemon juice from cooking the prawns.
- While the prawns are marinating, preheat your grill or barbecue to medium-high heat.
- Thread the marinated prawns onto the pre-soaked wooden skewers, ensuring each skewer has an even amount of prawns.
- Grill the prawn skewers for about 2-3 minutes per side, until they are pink, opaque, and slightly charred. Be careful not to overcook as prawns can quickly become dry and tough.
- Remove the skewers from the grill and serve immediately. Garnish with additional lemon wedges, parsley, and dill if desired.
Tips
- Soaking the wooden skewers in water prevents them from burning on the grill.
- Fresh herbs are preferred for this recipe to get the most flavor, but if not available, dried herbs can be substituted (use 1/3 the amount).
- The prawns can be marinated up to 30 minutes. Any longer, and the acidity from the lemon juice will start to 'cook' the prawns.
