Ingredients

Original recipe serves 4

Heavy cream
2 cups
Granulated sugar
3/4 cup
Lemon juice
1/2 cup, freshly squeezed
Lemon zest
1 tablespoon, for garnish
Fresh berries
1 cup, for serving (optional)

Instructions

  1. In a medium saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring frequently until the sugar has completely dissolved and the mixture comes to a gentle simmer.
  2. Once simmering, remove the saucepan from heat and stir in the freshly squeezed lemon juice. Mix well until fully combined.
  3. Allow the mixture to cool slightly, then pour it into individual serving cups or ramekins.
  4. Refrigerate for at least 4 hours, or until set. The posset should be thick and creamy.
  5. Before serving, garnish with lemon zest and fresh berries if desired.
