Ingredients
- Heavy cream
- 2 cups
- Granulated sugar
- 3/4 cup
- Lemon juice
- 1/2 cup, freshly squeezed
- Lemon zest
- 1 tablespoon, for garnish
- Fresh berries
- 1 cup, for serving (optional)
Instructions
- In a medium saucepan, combine the heavy cream and granulated sugar. Heat over medium heat, stirring frequently until the sugar has completely dissolved and the mixture comes to a gentle simmer.
- Once simmering, remove the saucepan from heat and stir in the freshly squeezed lemon juice. Mix well until fully combined.
- Allow the mixture to cool slightly, then pour it into individual serving cups or ramekins.
- Refrigerate for at least 4 hours, or until set. The posset should be thick and creamy.
- Before serving, garnish with lemon zest and fresh berries if desired.
