Lentil and Mushroom Stew

Ingredients

  • Salt and pepper (to taste)
  • Rosemary (1 teaspoon)
  • Thyme (1 teaspoon)
  • Vegetable broth (4 cups)
  • Lentils (1 cup, rinsed)
  • Mushrooms (2 cups, sliced)
  • Celery (2 stalks, chopped)
  • Carrots (2, chopped)
  • Garlic (2 cloves, minced)
  • Onions (1 large, chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, carrots, and celery and cook until the vegetables are soft, about 10 minutes.
  3. Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.
  4. Add the lentils, vegetable broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce the heat and simmer until the lentils are tender, about 30 minutes.
  5. Taste and adjust the seasoning if necessary. Serve hot.
