Instructions
- Rinse the pork liver under cold water and pat dry with paper towels. Remove any connective tissue or membranes.
- In a large skillet, melt the butter over medium heat. Add the finely chopped onion and sauté until softened and caramelized, about 5-7 minutes, stirring occasionally to prevent burning.
- Add the pork liver to the skillet and cook until browned on all sides, about 8-10 minutes. The liver should be cooked through but still tender.
- Transfer the cooked liver and onions to a food processor. Add the allspice, ground ginger, ground cloves, salt, and black pepper. Process until smooth, ensuring the flavors are well blended.
- With the food processor running, gradually add the heavy cream until fully incorporated. The cream enriches the pâté, giving it a silky texture.
- Transfer the liver paste to a serving dish and smooth the top. Cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the pâté to firm up.
- To serve, toast the bread slices until golden brown. Spread a generous amount of leverpastej over each slice and serve with tangy pickles on the side. The contrast of the rich pâté with the crisp pickles creates a delightful explosion of flavors.
Tips
- For a smoother pâté, strain the liver mixture through a fine-mesh sieve after processing.
- Feel free to experiment with additional herbs or spices, such as thyme or nutmeg, to customize the flavor to your liking.
- Leverpastej pairs wonderfully with a selection of cheeses and crisp vegetables.
