Servings: 8

Ingredients

Pork liver
1 pound, cleaned and trimmed
Unsalted butter
4 tablespoons
Onion
1 medium, finely chopped
Allspice
1/2 teaspoon
Ground ginger
1/4 teaspoon
Ground cloves
1/4 teaspoon
Salt
1 teaspoon
Black pepper
1/2 teaspoon
Heavy cream
1/2 cup
Bread
8 slices, for serving
Pickles
1 cup, for serving

Instructions

  1. Rinse the pork liver under cold water and pat dry with paper towels. Remove any connective tissue or membranes.
  2. In a large skillet, melt the butter over medium heat. Add the finely chopped onion and sauté until softened and caramelized, about 5-7 minutes, stirring occasionally to prevent burning.
  3. Add the pork liver to the skillet and cook until browned on all sides, about 8-10 minutes. The liver should be cooked through but still tender.
  4. Transfer the cooked liver and onions to a food processor. Add the allspice, ground ginger, ground cloves, salt, and black pepper. Process until smooth, ensuring the flavors are well blended.
  5. With the food processor running, gradually add the heavy cream until fully incorporated. The cream enriches the pâté, giving it a silky texture.
  6. Transfer the liver paste to a serving dish and smooth the top. Cover with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the pâté to firm up.
  7. To serve, toast the bread slices until golden brown. Spread a generous amount of leverpastej over each slice and serve with tangy pickles on the side. The contrast of the rich pâté with the crisp pickles creates a delightful explosion of flavors.
