Lignje S Krumpirom

Lignje s krumpirom is a delicious Croatian dish made with tender squid and potatoes, cooked in a flavorful tomato-based sauce.

Ingredients

  • Salt and pepper (to taste)
  • Olive oil (3 tablespoons)
  • Parsley (2 tablespoons, chopped)
  • Fish stock (1 cup)
  • White wine (1/2 cup)
  • Red bell pepper (1, diced)
  • Tomatoes (2 large, diced)
  • Tomato paste (2 tablespoons)
  • Garlic (3 cloves, minced)
  • Onion (1 large, finely chopped)
  • Potatoes (4 medium-sized, peeled and diced)
  • Squid (500 grams, cleaned and sliced into rings)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add the chopped onion and minced garlic, and sauté until translucent.
  3. Add the diced potatoes and cook for 5 minutes, stirring occasionally.
  4. Stir in the tomato paste and cook for another 2 minutes.
  5. Add the diced tomatoes, red bell pepper, white wine, and fish stock. Season with salt and pepper.
  6. Bring the mixture to a simmer and cook for 15 minutes, or until the potatoes are tender.
  7. Add the sliced squid to the pan and cook for an additional 5 minutes, or until the squid is cooked through and tender.
  8. Remove from heat and sprinkle with chopped parsley.
  9. Serve hot with crusty bread or rice.
