
Lignje S Krumpirom
Lignje s krumpirom is a delicious Croatian dish made with tender squid and potatoes, cooked in a flavorful tomato-based sauce.
Ingredients
- Salt and pepper (to taste)
- Olive oil (3 tablespoons)
- Parsley (2 tablespoons, chopped)
- Fish stock (1 cup)
- White wine (1/2 cup)
- Red bell pepper (1, diced)
- Tomatoes (2 large, diced)
- Tomato paste (2 tablespoons)
- Garlic (3 cloves, minced)
- Onion (1 large, finely chopped)
- Potatoes (4 medium-sized, peeled and diced)
- Squid (500 grams, cleaned and sliced into rings)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add the chopped onion and minced garlic, and sauté until translucent.
- Add the diced potatoes and cook for 5 minutes, stirring occasionally.
- Stir in the tomato paste and cook for another 2 minutes.
- Add the diced tomatoes, red bell pepper, white wine, and fish stock. Season with salt and pepper.
- Bring the mixture to a simmer and cook for 15 minutes, or until the potatoes are tender.
- Add the sliced squid to the pan and cook for an additional 5 minutes, or until the squid is cooked through and tender.
- Remove from heat and sprinkle with chopped parsley.
- Serve hot with crusty bread or rice.
