Limber is a delightful and refreshing Puerto Rican frozen treat that embodies the tropical flavors of the Caribbean. This icy dessert, often enjoyed during hot summer days, is made with vibrant fruit juice and a creamy touch of sweetened condensed milk, creating a perfect balance of sweetness and tang. Ingredients

Fruit juice (e.g., orange, pineapple, passion fruit)
2 cups
Sweetened condensed milk
1 cup
Water
1 cup
Sugar
1/4 cup (adjust to taste)
Vanilla extract
1 teaspoon

Instructions

  1. In a blender, combine the fruit juice, sweetened condensed milk, water, sugar, and vanilla extract.
  2. Blend the mixture on high speed until well combined and smooth. Taste and adjust the sweetness if necessary by adding more sugar.
  3. Pour the mixture into popsicle molds or small cups, filling them to about three-quarters full to allow for expansion when freezing.
  4. Insert popsicle sticks into the molds or cover the cups with plastic wrap and insert toothpicks for easier handling.
  5. Place the molds or cups in the freezer and freeze for at least 4 hours, or until completely firm.
  6. To serve, run warm water briefly over the outside of the molds for easier removal. Gently pull out the limbers and enjoy!
