Original recipe serves 4

Fresh cilantro
1 handful, roughly chopped
Salt
1/2 teaspoon, or to taste
Pepper
1/4 teaspoon, or to taste
Olive oil
2 tablespoons
Honey
2 tablespoons
Soy sauce
2 tablespoons
Garlic
2 cloves, minced
Ginger
1 inch, freshly grated
Lime juice
juice of 2 limes
Chicken breasts
4, boneless and skinless

Instructions

  1. In a bowl, combine the lime juice, grated ginger, minced garlic, soy sauce, honey, olive oil, salt, and pepper. This will be your marinade.
  2. Place the chicken breasts in a shallow dish and pour the marinade over them. Ensure all sides of the chicken are well-coated.
  3. Let the chicken marinate for at least 30 minutes. For a more intense flavor, cover the dish and leave it in the refrigerator to marinate overnight.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Remove the chicken from the marinade, shaking off any excess. Discard the remaining marinade.
  6. Grill the chicken for about 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink in the center.
  7. Once done, let the chicken rest for a few minutes off the heat. This allows the juices to redistribute, resulting in a juicier chicken.
  8. Slice the chicken into thin strips and garnish with fresh cilantro.
  9. Serve hot with your choice of side dishes like grilled vegetables or a fresh salad.
