Lime and Ginger Chicken

This lime and ginger chicken is a flavorful and refreshing dish that combines the tanginess of lime with the warmth of ginger.

Ingredients

  • Fresh cilantro (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Olive oil (2 tablespoons)
  • Honey (2 tablespoons)
  • Soy sauce (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Ginger (2 tablespoons, grated)
  • Lime juice (1/4 cup)
  • Chicken breasts (4 boneless, skinless)

Instructions

  1. In a bowl, combine the lime juice, grated ginger, minced garlic, soy sauce, honey, olive oil, salt, and pepper.
  2. Place the chicken breasts in a shallow dish and pour the marinade over them. Let marinate for at least 30 minutes, or overnight for maximum flavor.
  3. Preheat the grill or grill pan over medium-high heat.
  4. Remove the chicken from the marinade and discard the excess marinade.
  5. Grill the chicken for about 6-8 minutes per side, or until cooked through and no longer pink in the center.
  6. Remove the chicken from the grill and let it rest for a few minutes.
  7. Slice the chicken and garnish with fresh cilantro.
  8. Serve hot with your choice of side dishes.
