Luscious Lime Cheesecake

Instructions
- Preheat the oven to 325°F (165°C).
- In a medium-sized mixing bowl, combine the graham cracker crumbs and melted butter. Once the mixture reaches a sandy texture, press it into the bottom of a 9-inch springform pan to form the crust. Set aside.
- In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add in the sugar, lime zest, lime juice, and vanilla extract, continuing to beat until the mixture is creamy and well blended.
- Add the eggs one at a time, fully incorporating each egg before adding the next. Beat well after each addition to maintain a smooth mixture.
- Pour the cream cheese mixture over the prepared crust in the springform pan.
- Bake in the preheated oven for 50-60 minutes. The cheesecake is done when the center is set and the edges have turned a light golden brown.
- Remove the cheesecake from the oven and allow it to cool to room temperature. This will prevent any cracking from sudden temperature changes.
- Once cooled, refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to fully set.
