
Lime Cheesecake
This refreshing lime cheesecake is a perfect balance of tangy lime flavor and creamy texture.
Ingredients
- Lime slices (for garnish)
- Whipped cream (for topping)
- Eggs (3)
- Vanilla extract (1 teaspoon)
- Lime juice (1/4 cup)
- Lime zest (2 tablespoons)
- Granulated sugar (3/4 cup)
- Cream cheese (16 oz)
- Unsalted butter (1/3 cup, melted)
- Graham cracker crumbs (1 1/2 cups)
Instructions
- Preheat the oven to 325°F.
- In a mixing bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese, sugar, lime zest, lime juice, and vanilla extract until smooth and creamy.
- Add the eggs one at a time, beating well after each addition.
- Pour the cream cheese mixture over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set and the edges are slightly golden.
- Remove from the oven and let cool to room temperature.
- Refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set.
- Before serving, remove the cheesecake from the springform pan and top with whipped cream and lime slices for garnish.
