Instructions
- In a small bowl, whisk together the lime juice, minced garlic, olive oil, honey, cumin, salt, and pepper until well combined to create a zesty marinade.
- Place the chicken breasts in a shallow dish or a resealable plastic bag. Pour the marinade over the chicken, ensuring each piece is well-coated. Cover the dish or seal the bag and let marinate for at least 30 minutes at room temperature, or refrigerate for up to overnight for a more intense flavor.
- Preheat your grill or grill pan over medium-high heat. Lightly oil the grill grates with a paper towel dipped in oil to prevent sticking.
- Remove the chicken from the marinade, allowing any excess to drip off, and discard the leftover marinade to avoid contamination.
- Grill the chicken for 6-8 minutes per side, or until fully cooked (internal temperature should reach 165°F/74°C) and no longer pink in the center.
- Once grilled, remove the chicken from the grill and let it rest for about 5 minutes to retain its juices.
- Before serving, sprinkle the grilled chicken with chopped fresh cilantro for an added burst of freshness and flavor.
Tips
- For an extra kick, add a pinch of cayenne pepper or some diced jalapeños to the marinade.
- Serve with grilled vegetables or a fresh salad to complement the vibrant flavors of the chicken.
- Pair with a refreshing mango salsa for a delightful contrast.
