Ingredients

Basmati rice
1 cup
Water
2 cups
Fresh lime juice
2 tablespoons
Lime zest
1 teaspoon
Salt
1/2 teaspoon
Fresh cilantro
1/4 cup, chopped

Instructions

  1. Rinse the basmati rice under cold water in a fine-mesh strainer until the water runs clear to remove excess starch.
  2. In a medium saucepan, bring 2 cups of water to a rapid boil.
  3. Add the rinsed basmati rice, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and all the water is absorbed.
  4. Once cooked, remove the saucepan from heat and let it sit, covered, for an additional 5 minutes to allow the rice to steam.
  5. In a small bowl, mix together the freshly squeezed lime juice, lime zest, and salt until well combined.
