Ingredients

Original recipe serves 8

Lime zest
zest of 4 limes
Granulated sugar
1 cup
Water
2 cups
Lime juice
1 cup, freshly squeezed

Instructions

  1. In a medium saucepan, combine the fresh lime juice, water, and granulated sugar.
  2. Place the saucepan over medium heat and stir until the sugar is completely dissolved. This should take about 5-7 minutes.
  3. Remove the saucepan from the heat and stir in the lime zest. This infuses the syrup with the aromatic oils in the lime skin.
  4. Allow the lime-sugar mixture to cool down to room temperature.
  5. Once cooled, pour the mixture into your ice cream maker. Churn according to the manufacturer's instructions. This usually takes about 20-25 minutes.
  6. Transfer the churned sorbet to an airtight container. Smooth the top and cover.
  7. Freeze the sorbet for at least 4 hours until it is firm. For the best texture, try not to disturb the sorbet during this time.
  8. Serve the lime sorbet in chilled bowls or cones. Garnish with a slice of lime or sprig of mint if desired, and enjoy the refreshing taste of summer!
