Ingredients

Original recipe serves 4

Linguine pasta
12 ounces
Lemons
2, zested and juiced
Unsalted butter
4 tablespoons
Extra virgin olive oil
2 tablespoons
Garlic
2 cloves, minced
Parmesan cheese
1 cup, freshly grated
Fresh parsley
1/4 cup, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente.
  2. While the pasta is cooking, heat the butter and olive oil in a large skillet over medium heat.
  3. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
  4. Once the pasta is cooked, reserve about 1 cup of the pasta cooking water and then drain the linguine.
  5. Add the drained linguine to the skillet with the garlic and butter mixture. Toss to coat the pasta evenly.
  6. Add the lemon zest, lemon juice, and half of the reserved pasta water to the skillet. Toss to combine, adding more pasta water if needed to create a silky sauce.
  7. Stir in the grated Parmesan cheese until melted and well combined. Season with salt and black pepper to taste.
  8. Remove from heat and stir in the chopped parsley.
  9. Serve immediately with additional Parmesan cheese on top, if desired.
