Linguine al Limone
Linguine al Limone is a fresh and zesty Italian pasta dish, perfect for those who love a bright and tangy flavor. Ingredients
- Linguine pasta
- 12 ounces
- Lemons
- 2, zested and juiced
- Unsalted butter
- 4 tablespoons
- Extra virgin olive oil
- 2 tablespoons
- Garlic
- 2 cloves, minced
- Parmesan cheese
- 1 cup, freshly grated
- Fresh parsley
- 1/4 cup, chopped
- Salt
- to taste
- Black pepper
- to taste
Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente.
- While the pasta is cooking, heat the butter and olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.
- Once the pasta is cooked, reserve about 1 cup of the pasta cooking water and then drain the linguine.
- Add the drained linguine to the skillet with the garlic and butter mixture. Toss to coat the pasta evenly.
- Add the lemon zest, lemon juice, and half of the reserved pasta water to the skillet. Toss to combine, adding more pasta water if needed to create a silky sauce.
- Stir in the grated Parmesan cheese until melted and well combined. Season with salt and black pepper to taste.
- Remove from heat and stir in the chopped parsley.
- Serve immediately with additional Parmesan cheese on top, if desired.
