Ingredients

Parmesan cheese
1 cup, freshly grated
Parsley
1/4 cup, freshly chopped
Red pepper flakes

Anchovy fillets

Linguine

Instructions

  1. Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions until al dente. Reserve 1 cup of the pasta water before draining the pasta.
  2. Meanwhile, heat the olive oil in a large skillet over medium heat. Add the minced garlic, chopped anchovies, and red pepper flakes to the skillet. Stir frequently and cook until the anchovies have melted into the oil and the garlic is golden and aromatic.
  3. Add the cooked linguine to the skillet, followed by the reserved pasta water. Toss the pasta until it's well coated with the sauce. The starch from the pasta water will help thicken the sauce and allow it to cling to the pasta.
  4. Remove the skillet from the heat and stir in the freshly chopped parsley and grated Parmesan cheese. Toss again to combine.
