Instructions
- Bring a large pot of salted water to a boil. Add the linguine and cook according to the package instructions for al dente, usually 8 to 10 minutes.
- While the pasta is cooking, prepare the avocado sauce. In a food processor, combine the ripe avocados, minced garlic, fresh lemon juice, extra virgin olive oil, salt, and pepper. Process the mixture until it forms a smooth, creamy sauce.
- Once the pasta is done, reserve about 1 cup of the pasta water and then drain the rest.
- Return the cooked pasta to the pot. Pour in the avocado sauce and toss to combine, making sure the pasta is evenly coated. If needed, add some of the reserved pasta water to thin the sauce to your desired consistency.
