Instructions
- In a large skillet, heat the olive oil over medium heat. Once hot, add the sliced onions.
- Cook the onions, stirring occasionally, until they are caramelized and golden brown, about 20 minutes. If they begin to stick, lower the heat slightly and add a splash of water to deglaze the pan.
- Add the minced garlic and chopped thyme to the skillet. Sauté for another 2 minutes until fragrant.
- Meanwhile, bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- Add the drained linguine to the skillet with the caramelized onions. Toss to combine, adding reserved pasta water a little at a time until a silky sauce forms.
- Season with salt and black pepper to taste. If desired, stir in the grated Parmesan cheese for an extra layer of flavor.
- Serve warm, garnished with additional Parmesan cheese and a sprinkle of fresh thyme.
Tips
- For a richer flavor, consider adding a splash of white wine when the onions are nearly caramelized.
- Feel free to substitute the linguine with any other pasta shape you prefer, such as fettuccine or spaghetti.
- Add some sautéed spinach or arugula for a pop of color and added nutrition.
