Ingredients

Salt and pepper

Olive oil
1/4 cup
Parmesan cheese
1 cup, grated plus additional for garnish
Garlic
3 cloves
Fresh mint leaves
1 cup
Ground lamb
500g
Linguine
500g

Instructions

  1. Bring a large pot of salted water to a boil and cook the linguine according to the package instructions until al dente. Drain and set aside.
  2. While the pasta is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground lamb, season with salt and pepper, and cook until browned and cooked through. Remove from the skillet and set aside.
  3. In a food processor, combine the mint leaves, garlic, and 1 cup of Parmesan cheese. Pulse until finely chopped. With the motor running, slowly add the remaining olive oil until the mixture forms a smooth and creamy pesto.
  4. Return the skillet to medium heat. Add the cooked lamb and the mint pesto, stirring to combine. Cook for 2-3 minutes, until heated through.
  5. Add the cooked linguine to the skillet and toss to combine with the lamb and pesto. Adjust seasoning with additional salt and pepper, if needed.
