Ingredients

Linguine pasta
12 ounces
Lamb shoulder or leg, diced
1 pound
Olive oil
2 tablespoons
Garlic, minced
3 cloves
Tzatziki sauce
1 cup
Fresh dill, chopped
2 tablespoons
Salt
to taste
Black pepper, freshly ground
to taste

Instructions

  1. Bring a large pot of salted water to a boil. Cook the linguine according to the package instructions until al dente. Drain and set aside, reserving a small cup of pasta water.
  2. In a large pan, heat the olive oil over medium heat. Add the diced lamb and cook, turning occasionally, until browned on all sides, about 5-7 minutes.
  3. Stir in the minced garlic and sauté for an additional minute until fragrant, being careful not to burn the garlic.
  4. Reduce the heat to low and stir in the tzatziki sauce. If the sauce is too thick, gradually add a little reserved pasta water to reach the desired creamy consistency. Season with salt and freshly ground black pepper to taste.
  5. Toss the cooked linguine in the tzatziki and lamb mixture, ensuring the pasta is well-coated. If needed, add more reserved pasta water to help the sauce adhere to the pasta.
