Austrian Linzer Cookies

Drawing inspiration from Austria's iconic Linzer Torte, these Linzer Cookies are a delightful fusion of a rich, buttery almond dough encasing a heart of sweet, tangy raspberry jam. Each bite whisks you away to the charming cobbled streets of Linz, where this dessert has been a cherished tradition since the 17th century. The dusting of powdered sugar, like a soft snowfall, adds a final magical touch to these enchanting cookies.

Ingredients

  • Powdered sugar (1/4 cup, for dusting)
  • Raspberry jam (1/2 cup)
  • Salt (1/4 teaspoon)
  • All-purpose flour (1 cup)
  • Almond flour (3/4 cup)
  • Vanilla extract (1 teaspoon)
  • Egg yolks (2)
  • Granulated sugar (1/2 cup)
  • Unsalted butter (1 cup, softened)

Instructions

  1. In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
  2. To this mixture, add the egg yolks and vanilla extract. Mix until they are well incorporated.
  3. In another bowl, whisk together the almond flour, all-purpose flour, and salt.
  4. Gradually add the dry ingredients to the butter mixture. Mix until a dough forms.
  5. Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour. This will make the dough easier to handle.
  6. Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper.
  7. On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness.
  8. Using a round cookie cutter, cut out cookies and place them on the prepared baking sheets.
  9. Use a smaller cookie cutter to cut out the centers of half of the cookies. These will serve as the 'lids' of your Linzer cookies.
  10. Bake the cookies for 10-12 minutes, until the edges are lightly golden. Let them cool completely on the baking sheets.
  11. Spread a teaspoon of raspberry jam on the whole cookies, then top with the cut-out cookies.
  12. Just before serving, dust the cookies with powdered sugar for a festive, snow-like effect. Enjoy!
