Austrian Linzer Cookies
Drawing inspiration from Austria's iconic Linzer Torte, these Linzer Cookies are a delightful fusion of a rich, buttery almond dough encasing a heart of sweet, tangy raspberry jam. Each bite whisks you away to the charming cobbled streets of Linz, where this dessert has been a cherished tradition since the 17th century. The dusting of powdered sugar, like a soft snowfall, adds a final magical touch to these enchanting cookies.
Ingredients
- 1/4 cup, for dusting Powdered sugar
- 1/2 cup Raspberry jam
- 1/4 teaspoon Salt
- 1 cup All-purpose flour
- 3/4 cup Almond flour
- 1 teaspoon Vanilla extract
- 2 Egg yolks
- 1/2 cup Granulated sugar
- 1 cup, softened Unsalted butter

Instructions
- In a large bowl, cream together the softened butter and granulated sugar until the mixture is light and fluffy.
- To this mixture, add the egg yolks and vanilla extract. Mix until they are well incorporated.
- In another bowl, whisk together the almond flour, all-purpose flour, and salt.
- Gradually add the dry ingredients to the butter mixture. Mix until a dough forms.
- Divide the dough in half and shape each half into a disk. Wrap each disk in plastic wrap and refrigerate for at least 1 hour. This will make the dough easier to handle.
- Preheat the oven to 350°F (175°C). Line your baking sheets with parchment paper.
- On a lightly floured surface, roll out one disk of dough to about 1/8-inch thickness.
- Using a round cookie cutter, cut out cookies and place them on the prepared baking sheets.
- Use a smaller cookie cutter to cut out the centers of half of the cookies. These will serve as the 'lids' of your Linzer cookies.
- Bake the cookies for 10-12 minutes, until the edges are lightly golden. Let them cool completely on the baking sheets.
- Spread a teaspoon of raspberry jam on the whole cookies, then top with the cut-out cookies.
- Just before serving, dust the cookies with powdered sugar for a festive, snow-like effect. Enjoy!

- For a festive twist, try using cookie cutters in the shape of hearts or stars for the center cut-outs during the holiday season. You could also experiment with different jams like strawberry or apricot for a unique flavor twist.
