Ingredients

Potatoes
4 large, peeled and diced
Olive oil
2 tablespoons
Salt
1 teaspoon, or to taste
Black Pepper
1/2 teaspoon, or to taste
Bacon
6 slices
Onion
1 medium, diced
Bell pepper
1 medium, diced
Garlic
2 cloves, minced
Cheddar cheese
1 cup, shredded
Green onions
2, chopped

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced potatoes with olive oil, salt, and pepper until evenly coated.
  3. Spread the potatoes in a single layer on a baking sheet and bake for 20 minutes, or until crispy and golden.
  4. While the potatoes are baking, cook the bacon in a large skillet over medium heat until crispy. Once done, remove the bacon, crumble it, and set aside.
  5. In the same skillet, sauté the diced onion, bell pepper, and minced garlic until softened.
  6. Add the baked potatoes to the skillet and mix well with the sautéed vegetables.
  7. Sprinkle the crumbled bacon and shredded cheese evenly over the potato mixture.
  8. Cover the skillet and let it cook for a few minutes until the cheese is melted and gooey.
