Ingredients
- Russet potatoes
- 4 large
- Olive oil
- 2 tablespoons
- Salt
- 1 teaspoon
- Black pepper
- 1/2 teaspoon
- Cheddar cheese
- 1 cup, shredded
- Bacon
- 6 strips, cooked and crumbled
- Green onions
- 1/4 cup, chopped
- Sour cream
- 1/2 cup
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the potatoes thoroughly under cold water and dry them completely. Prick each potato several times with a fork to allow steam to escape during baking.
- Rub the potatoes with olive oil, coating them evenly, then season generously with salt and pepper.
- Place the potatoes directly on the oven rack and bake for 1 hour, or until they are tender when pierced with a fork and the skins are crispy.
- Once baked, let the potatoes cool for a few minutes until they can be handled. Cut each potato in half lengthwise.
- Carefully scoop out most of the insides of the potatoes, leaving a thin layer of potato in the skin to maintain its structure.
- Arrange the potato skins on a baking sheet. Fill each skin with a generous amount of shredded cheddar cheese and top with crumbled bacon.
- Return the filled potato skins to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and sprinkle with chopped green onions. Serve hot with a side of sour cream for dipping.
