Servings: 4

Ingredients

Potatoes
2 large, grated
Unsalted butter
4 tablespoons
Onion
1 small, finely chopped
Garlic
2 cloves, minced
Cooked lobster meat
1 cup, chopped
Chives
2 tablespoons, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. Begin by grating the potatoes and placing them in a clean kitchen towel. Squeeze out as much liquid as possible; this step is crucial for achieving the perfect crispy texture.
  2. In a large skillet, melt the unsalted butter over medium heat until it becomes foamy.
  3. Add the finely chopped onion and minced garlic to the skillet. Sauté until softened and fragrant, which should take about 5 minutes.
  4. Spread the grated potatoes evenly in the skillet. Allow them to cook undisturbed for approximately 10 minutes, until they are golden brown and crispy on the bottom.
  5. Carefully flip the potatoes using a spatula and cook the other side for an additional 10 minutes until it becomes golden and crispy.
  6. Gently stir in the chopped lobster meat and cook for another 2 minutes, just until the lobster is heated through.
  7. Season the dish with salt and pepper to taste, and finish by sprinkling the fresh chopped chives over the top before serving.
