Creamy Lobster Mac and Cheese

Instructions
- Preheat your oven to 375°F (190°C).
- Cook the macaroni in a large pot of salted boiling water, according to the package instructions, until al dente. Drain well and set aside.
- In a large saucepan, melt the butter over medium heat. Stir in the flour to create a roux, and cook for 1 minute until the mixture is smooth and golden.
- Gradually whisk in the milk to the roux, ensuring no lumps form. Bring the mixture to a boil, then reduce heat to low and simmer, stirring constantly, for 2 minutes or until the sauce has thickened.
- Remove the saucepan from the heat. Stir in the cheddar cheese and Parmesan, season with salt and pepper, and stir until the cheese has fully melted and the sauce is smooth and creamy.
- Add the cooked macaroni and chopped lobster meat to the cheese sauce, stirring well to ensure everything is well coated.
- Transfer the lobster macaroni and cheese to a greased baking dish. Sprinkle evenly with bread crumbs.
- Bake uncovered in the preheated oven for 20-25 minutes, or until the breadcrumb topping is golden brown and the sauce is bubbling. Let the dish stand for a few minutes before serving for the flavors to meld together.
