Instructions
- Preheat your grill to medium-high heat.
- Brush the lobster tails with olive oil and season generously with salt and black pepper.
- Place the lobster tails, cut side down, on the grill. Cook for 5-6 minutes per side or until the meat is opaque and cooked through, adjusting time based on the size of the tails.
- Remove the lobster from the grill and allow to cool slightly. Carefully extract the meat from the shells and chop it into bite-sized pieces.
- Warm the flour tortillas on the grill for about 30 seconds per side until they are pliable and slightly charred.
- In a mixing bowl, combine the shredded lettuce, diced tomato, sliced red onion, and chopped cilantro to create a fresh taco filling. Toss gently to combine.
- In another bowl, whisk together the lime juice, sour cream, and hot sauce until smooth to create the zesty lime sauce. Adjust the hot sauce to your preferred spice level.
- To assemble the tacos, place a generous spoonful of the lettuce mixture onto each tortilla.
- Top with the grilled lobster meat and avocado slices.
- Drizzle the zesty lime sauce over the top of each taco.
- Serve immediately with extra lime wedges and hot sauce on the side for added flavor.
Tips
- For an extra layer of flavor, consider adding some diced mango or pineapple to the taco filling for a sweet contrast.
- If you prefer corn tortillas over flour, feel free to substitute them; just warm them slightly before filling.
- For a spicier kick, add sliced jalapeños or a sprinkle of chili powder to the taco filling.
