Ingredients
- 1 pound, sliced into thin strips Beef sirloin

- 1/4 cup, chopped, for garnish Fresh cilantro

Instructions
- In a bowl, combine the soy sauce, red wine vinegar, minced garlic, cumin, salt, and pepper. Add the sliced beef and marinate for 15 minutes to infuse the flavors.
- Heat the vegetable oil in a large skillet or wok over high heat until shimmering.
- Add the marinated beef to the skillet and cook for 2-3 minutes, stirring frequently, until browned and cooked through. Remove the beef from the skillet and set aside.
- In the same skillet, add the sliced red onion, tomatoes, and yellow chili pepper. Stir-fry for 2-3 minutes, until the vegetables are slightly softened but still vibrant.
- Return the cooked beef to the skillet and toss with the vegetables to combine.
- Add the cooked French fries and gently toss everything together until well mixed.
- Remove from heat and garnish with fresh cilantro before serving.
- Serve the lomo saltado over a generous portion of cooked white rice to soak up the delicious juices.
