Loobia Chiti

Ingredients
- 1/2 cup, chopped Fresh cilantro
- 2 tablespoons Lemon juice
- 3 tablespoons Vegetable oil
- 2 cups Water
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/2 teaspoon Cinnamon
- 1 teaspoon Cumin
- 1 teaspoon Turmeric
- 2 tablespoons Tomato paste
- 3 cloves, minced Garlic
- 1 large, chopped Onion
- 1 pound, cubed Beef or lamb
- 2 cups, trimmed and cut into 1-inch pieces Green beans

Instructions
- In a large pot, heat the vegetable oil over medium heat until shimmering.
- Add the chopped onion and minced garlic to the pot. Sauté for about 5-7 minutes, stirring occasionally, until the onion becomes golden brown and fragrant.
- Increase the heat to medium-high and add the cubed meat to the pot. Cook for 6-8 minutes, browning the meat on all sides.
- Stir in the tomato paste, turmeric, cumin, cinnamon, salt, and pepper, mixing well to coat the meat evenly with the spices.
- Add the green beans and pour in the water. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 45 minutes, or until the meat is tender and the green beans are cooked through.
- Once cooked, stir in the lemon juice and chopped cilantro. Allow to cook for an additional 5 minutes to meld the flavors.
- Serve hot, accompanied by steamed rice or warm bread to soak up the delicious sauce.
