Ingredients

- Fresh cilantro

- Eggs
- 4, beaten
- Tomato
- 1, diced
- Garlic
- 2 cloves, minced
- Jalapeno
- 1, diced (remove seeds for less heat)
- Bell pepper
- 1, diced (red or green)
- Onion
- 1/2, chopped
- Beef (shredded beef jerky or cooked flank steak)
- 2 cups
- Olive oil
- 2 tablespoons, for cooking
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the chopped onion, bell pepper, jalapeno, and minced garlic. Cook until the vegetables are softened, about 5-7 minutes.
- Stir in the shredded beef, diced tomato, cumin, chili powder, salt, and pepper. Cook for 3-5 minutes until the beef is heated through and well coated with spices.
- In a separate bowl, beat the eggs with a pinch of salt and pepper.
- Push the beef mixture to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked to your liking, about 2-3 minutes.
- Gently mix the scrambled eggs with the beef mixture in the skillet until well combined.
- Sprinkle fresh cilantro over the machaca con huevos and stir to incorporate.
