Mackerel fillets
2, skin on
Salt
to taste
Black pepper
to taste
Lemon
1, juiced and zested
Fresh parsley
2 tablespoons, chopped
Butter
2 tablespoons, softened
Bread
4 slices, your choice (sourdough, whole grain, etc.)

Instructions

  1. Preheat the grill to medium heat.
  2. Place the mackerel fillets on a baking tray, skin side up. Season generously with salt, pepper, and a squeeze of lemon juice.
  3. Grill the mackerel for about 5-7 minutes, or until the skin is crispy and the fish is cooked through. The flesh should flake easily with a fork.
  4. While the mackerel is grilling, toast the bread slices until golden brown and crisp. Spread each slice with softened butter while warm.
  5. Once the mackerel is cooked, remove it from the grill and carefully flake the fish using a fork, discarding the skin if desired.
  6. Top each piece of buttered toast with the flaked mackerel. Sprinkle with lemon zest and chopped parsley for a fresh finish.
  7. Serve immediately while still warm, with additional lemon wedges on the side for drizzling.
