Grilled Mackerel on Toast

Indulge in the delightful simplicity of Grilled Mackerel on Toast, a dish that beautifully marries the rich, savory flavor of mackerel with the warmth of crispy toast. This dish is not only a quick and satisfying lunch or light dinner option, but also a nod to the traditional seafood fare enjoyed along coastal regions. The freshness of parsley and the zing of lemon elevate the flavor, making every bite a gourmet experience. Perfect for enjoying on a sunny afternoon or as a quick weeknight meal, this recipe is a must-try for seafood lovers.

Ingredients

Mackerel fillets
2, skin on
Salt
to taste
Black pepper
to taste
Lemon
1, juiced and zested
Fresh parsley
2 tablespoons, chopped
Butter
2 tablespoons, softened
Bread
4 slices, your choice (sourdough, whole grain, etc.)

Instructions

  1. Preheat the grill to medium heat.
  2. Place the mackerel fillets on a baking tray, skin side up. Season generously with salt, pepper, and a squeeze of lemon juice.
  3. Grill the mackerel for about 5-7 minutes, or until the skin is crispy and the fish is cooked through. The flesh should flake easily with a fork.
  4. While the mackerel is grilling, toast the bread slices until golden brown and crisp. Spread each slice with softened butter while warm.
  5. Once the mackerel is cooked, remove it from the grill and carefully flake the fish using a fork, discarding the skin if desired.
  6. Top each piece of buttered toast with the flaked mackerel. Sprinkle with lemon zest and chopped parsley for a fresh finish.
  7. Serve immediately while still warm, with additional lemon wedges on the side for drizzling.

Tips

  • 💡 For a touch of heat, add a sprinkle of red pepper flakes to the mackerel before grilling.
  • 💡 Experiment with different types of bread for varied texture and flavor.
  • 💡 This dish pairs wonderfully with a side salad or pickled vegetables for added freshness.
