Ingredients
- Mackerel fillets
- 2, skin on
- Salt

- Black pepper

- Lemon
- 1, juiced and zested
- Fresh parsley
- 2 tablespoons, chopped
- Butter
- 2 tablespoons, softened
- Bread
- 4 slices, your choice (sourdough, whole grain, etc.)
Instructions
- Preheat the grill to medium heat.
- Place the mackerel fillets on a baking tray, skin side up. Season generously with salt, pepper, and a squeeze of lemon juice.
- Grill the mackerel for about 5-7 minutes, or until the skin is crispy and the fish is cooked through. The flesh should flake easily with a fork.
- While the mackerel is grilling, toast the bread slices until golden brown and crisp. Spread each slice with softened butter while warm.
- Once the mackerel is cooked, remove it from the grill and carefully flake the fish using a fork, discarding the skin if desired.
- Top each piece of buttered toast with the flaked mackerel. Sprinkle with lemon zest and chopped parsley for a fresh finish.
- Serve immediately while still warm, with additional lemon wedges on the side for drizzling.
