Majarete

- 2 cups, fresh or frozen Corn kernels
- 2 cups Coconut milk
- 1/2 cup Sugar
- 1 teaspoon (for garnish) Ground cinnamon
- 1/4 teaspoon Salt
- 1 teaspoon Vanilla extract
- 1 teaspoon Cinnamon
- 1/4 cup Cornstarch
- 1/2 cup Water

Instructions
- In a blender, combine the corn kernels and coconut milk. Blend until smooth, ensuring there are no lumps.
- In a medium saucepan, combine the corn and coconut mixture with sugar, cinnamon, vanilla extract, and salt. Cook over medium heat, stirring constantly, until the mixture begins to thicken, about 10 minutes.
- In a small bowl, mix the cornstarch with the water until well combined and smooth. Gradually add this cornstarch mixture to the saucepan, stirring continuously. Continue to cook for another 5 minutes, or until the mixture reaches a pudding-like consistency.
- Remove the saucepan from heat and let the mixture cool for a few minutes before pouring it into individual serving bowls or molds.
- Refrigerate for at least 2 hours, or until the Majarete is fully set.
- Before serving, sprinkle each serving with ground cinnamon for an aromatic garnish.
