Ingredients
- Potatoes
- 4 medium, peeled and diced
- Onion
- 1 small, finely chopped
- Garlic
- 2 cloves, minced
- Fresh cilantro
- 1/4 cup, chopped
- Fresh parsley
- 1/4 cup, chopped
- Cumin
- 1 teaspoon
- Paprika
- 1 teaspoon
- Salt
- 1 teaspoon, or to taste
- Vegetable oil
- for frying
Instructions
- Bring a pot of salted water to a boil, add the diced potatoes, and cook until tender, about 15-20 minutes. Drain and let cool slightly.
- In a large bowl, mash the boiled potatoes until smooth.
- Add the chopped onion, minced garlic, cilantro, parsley, cumin, paprika, and salt to the mashed potatoes. Mix well until all ingredients are fully combined.
- Shape the potato mixture into small patties or balls, about 2 inches in diameter.
- Heat vegetable oil in a frying pan over medium heat. Ensure the oil is hot enough by dropping a small piece of potato mixture in; it should sizzle.
- Fry the Makouda patties in batches, cooking until golden brown on both sides, approximately 3-4 minutes per side.
- Remove from the pan and place on a paper towel-lined plate to drain excess oil.
- Serve hot as an appetizer or snack, optionally with a side of spicy harissa sauce or a garlic yogurt dip.
