Ingredients

Potatoes
4 medium, peeled and diced
Onion
1 small, finely chopped
Garlic
2 cloves, minced
Fresh cilantro
1/4 cup, chopped
Fresh parsley
1/4 cup, chopped
Cumin
1 teaspoon
Paprika
1 teaspoon
Salt
1 teaspoon, or to taste
Vegetable oil
for frying

Instructions

  1. Bring a pot of salted water to a boil, add the diced potatoes, and cook until tender, about 15-20 minutes. Drain and let cool slightly.
  2. In a large bowl, mash the boiled potatoes until smooth.
  3. Add the chopped onion, minced garlic, cilantro, parsley, cumin, paprika, and salt to the mashed potatoes. Mix well until all ingredients are fully combined.
  4. Shape the potato mixture into small patties or balls, about 2 inches in diameter.
  5. Heat vegetable oil in a frying pan over medium heat. Ensure the oil is hot enough by dropping a small piece of potato mixture in; it should sizzle.
  6. Fry the Makouda patties in batches, cooking until golden brown on both sides, approximately 3-4 minutes per side.
  7. Remove from the pan and place on a paper towel-lined plate to drain excess oil.
  8. Serve hot as an appetizer or snack, optionally with a side of spicy harissa sauce or a garlic yogurt dip.
