Ingredients

Sugar
1 cup
Eggs
2 large
Apricot jam
1/2 cup
Plain flour
1 cup
Baking soda
1 teaspoon
Salt
1/4 teaspoon
Butter
1/4 cup, melted
Milk
1/2 cup
Vinegar
1 tablespoon
Vanilla essence
1 teaspoon
Cream
1 cup

Instructions

  1. Preheat the oven to 180°C (350°F) and grease a baking dish (approximately 8x8 inches or similar).
  2. In a large mixing bowl, beat the sugar and eggs together until light and fluffy. Then, mix in the apricot jam until well combined.
  3. In a separate bowl, sift together the plain flour, baking soda, and salt. Gradually mix the dry ingredients into the egg mixture until just combined.
  4. In a small saucepan, melt the butter and then remove from heat. Stir in the vinegar and milk until well mixed. Add this wet mixture to the egg and flour mixture, stirring until fully incorporated.
  5. Pour the batter into the greased baking dish and bake in the preheated oven for about 45 minutes, or until the top is nicely browned and a toothpick inserted into the center comes out clean.
  6. While the pudding is baking, prepare the sauce by combining the cream, sugar, melted butter, and vanilla essence in a saucepan over medium heat. Stir until the sugar has dissolved and the sauce is warm but not boiling.
  7. As soon as the pudding comes out of the oven, pour the warm cream sauce generously over the top.
  8. Serve the Malva Pudding hot, ideally with a side of custard or vanilla ice cream for an extra indulgent treat.
