Ingredients
- Olive oil
- 1/4 cup
- Black pepper
- 1 teaspoon
- Salt
- 1 teaspoon
- Ground cumin
- 1 tablespoon
- Ground coriander
- 1 tablespoon
- Lemon juice
- 2 tablespoons
- Garlic
- 4 cloves, minced
- Lamb or beef
- 2 pounds, cut into cubes
Instructions
- In a large mixing bowl, combine the minced garlic, lemon juice, ground coriander, ground cumin, salt, black pepper, and olive oil to create a flavorful marinade.
- Add the meat cubes to the marinade and mix thoroughly to ensure each piece is well coated. Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or overnight for optimal flavor absorption.
- Preheat your grill to medium heat, ensuring it's hot enough to achieve a good sear on the meat.
- Remove the marinated meat from the fridge and let it come to room temperature for about 15 minutes.
- Carefully place the meat on the grill, reserving any leftover marinade. Grill the meat for approximately 30 minutes, turning occasionally to ensure even cooking, until it reaches your desired level of doneness.
- If desired, brush the meat with the reserved marinade during the last few minutes of grilling for added flavor.
- Once cooked, remove the meat from the grill and let it rest for about 5 minutes before serving to retain its juices.
Tips
- For an extra kick, add a teaspoon of chili powder or cayenne pepper to the marinade.
- Try using skewers to grill the meat for easy serving and a fun presentation.
- Serve with traditional Sudanese flatbread (kisra) or over a bed of fragrant rice.
