Mandazi
Mandazi, often referred to as East African doughnuts, is a delightful fried bread that is soft, fluffy, and slightly sweet. Ingredients
- 4 cups All-purpose flour
- 1/4 cup Sugar
- 1 tablespoon Baking powder
- 1/2 teaspoon Salt
- 1 cup Coconut milk
- 1/4 cup (for the dough) Vegetable oil
- 1 teaspoon Vanilla extract
- Enough to fill a deep frying pan or pot Oil for frying
- For dusting (optional) Powdered sugar

Instructions
- In a large mixing bowl, sift together the all-purpose flour, sugar, baking powder, and salt until well combined.
- In a separate bowl, mix together the coconut milk, vegetable oil, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir until a soft dough begins to form.
- Transfer the dough onto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
- Cover the dough with a clean kitchen towel and let it rest for 10 minutes to relax the gluten.
- In a deep frying pan or pot, heat enough oil over medium heat until it reaches 350°F (175°C).
- Divide the rested dough into 12 equal portions and shape each piece into a ball.
- Gently flatten each ball into a disc about 1/4 inch thick.
- Carefully place the flattened discs into the hot oil, frying them in batches for about 2-3 minutes on each side, or until they are golden brown.
- Use a slotted spoon to remove the mandazi from the oil and drain them on a paper towel-lined plate.
- Optional: Dust the warm mandazi with powdered sugar before serving for an extra touch of sweetness.
