Mandazi, often referred to as East African doughnuts, is a delightful fried bread that is soft, fluffy, and slightly sweet. Ingredients

All-purpose flour
4 cups
Sugar
1/4 cup
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Coconut milk
1 cup
Vegetable oil
1/4 cup (for the dough)
Vanilla extract
1 teaspoon
Oil for frying
enough to fill a deep frying pan or pot
Powdered sugar
for dusting (optional)

Instructions

  1. In a large mixing bowl, sift together the all-purpose flour, sugar, baking powder, and salt until well combined.
  2. In a separate bowl, mix together the coconut milk, vegetable oil, and vanilla extract.
  3. Pour the wet mixture into the dry ingredients and stir until a soft dough begins to form.
  4. Transfer the dough onto a lightly floured surface and knead for about 5 minutes, or until the dough is smooth and elastic.
  5. Cover the dough with a clean kitchen towel and let it rest for 10 minutes to relax the gluten.
  6. In a deep frying pan or pot, heat enough oil over medium heat until it reaches 350°F (175°C).
  7. Divide the rested dough into 12 equal portions and shape each piece into a ball.
  8. Gently flatten each ball into a disc about 1/4 inch thick.
  9. Carefully place the flattened discs into the hot oil, frying them in batches for about 2-3 minutes on each side, or until they are golden brown.
  10. Use a slotted spoon to remove the mandazi from the oil and drain them on a paper towel-lined plate.
  11. Optional: Dust the warm mandazi with powdered sugar before serving for an extra touch of sweetness.
  12. Serve warm and enjoy with a cup of tea or coffee for a delightful experience!
