
Mango and Bell Pepper Stir Fry
This vibrant and flavorful stir fry combines the sweetness of mangoes with the crunch of bell peppers.
Ingredients
- Sesame seeds (1 tablespoon (for garnish))
- Green onions (2 stalks, chopped (for garnish))
- Cooked rice (2 cups)
- Salt (to taste)
- Red pepper flakes (1/2 teaspoon)
- Sesame oil (1 tablespoon)
- Honey (1 tablespoon)
- Soy sauce (2 tablespoons)
- Ginger (1 teaspoon, grated)
- Garlic (2 cloves, minced)
- Onion (1 small, thinly sliced)
- Bell peppers (2 medium, thinly sliced)
- Mango (1 large, ripe, peeled and diced)
Instructions
- Heat the sesame oil in a large skillet or wok over medium-high heat.
- Add the onion, garlic, and ginger. Stir fry for 2-3 minutes until fragrant.
- Add the bell peppers and cook for another 2-3 minutes until slightly softened.
- In a small bowl, whisk together the soy sauce, honey, red pepper flakes, and salt.
- Pour the sauce into the skillet and stir to coat the vegetables.
- Add the diced mango and cook for an additional 2 minutes until heated through.
- Serve the stir fry over cooked rice.
- Garnish with chopped green onions and sesame seeds.
