
Mango and Cucumber Salad
This refreshing salad combines the sweetness of mangoes with the crispness of cucumbers for a perfect summer side dish.
Ingredients
- Black pepper (1/4 teaspoon)
- Salt (1/4 teaspoon)
- Honey (1 tablespoon)
- Lime juice (2 tablespoons)
- Fresh cilantro (1/4 cup, chopped)
- Red onion (1/4 cup, thinly sliced)
- Cucumber (1 large, peeled and diced)
- Mango (2 ripe, peeled and diced)
Instructions
- In a large bowl, combine the diced mango, cucumber, red onion, and chopped cilantro.
- In a small bowl, whisk together the lime juice, honey, salt, and black pepper.
- Pour the dressing over the mango and cucumber mixture and toss to coat evenly.
