Mango and Sticky Rice

Ingredients
- Sweet sticky rice (1 cup)
- Coconut milk (1 cup)
- Sugar (1/3 cup)
- Salt (1/4 teaspoon)
- Ripe mango (2, peeled and sliced)
- Sesame seeds (2 tablespoons, toasted (for garnish))
- Water (for soaking and steaming)
Instructions
- Rinse the sweet sticky rice in cold water until the water runs clear. Soak the rice in cold water for at least 30 minutes, or up to 4 hours for best results.
- Drain the rice and place it in a steamer basket lined with cheesecloth. Fill a pot with water and bring to a boil. Steam the rice over boiling water for 20-25 minutes, or until tender and translucent.
- While the rice is steaming, combine the coconut milk, sugar, and salt in a small saucepan over medium heat. Stir constantly until the sugar has completely dissolved, but do not bring to a boil.
- Once the rice is done steaming, transfer it to a large bowl and pour about 3/4 of the coconut milk mixture over it. Stir gently to combine, ensuring that the rice absorbs the coconut flavor. Let it sit for 10-15 minutes.
- To serve, divide the sticky rice among four bowls, topping each serving with sliced mango. Drizzle the remaining coconut milk mixture over the top and sprinkle with toasted sesame seeds for an added crunch.
