Mango and Sticky Rice Dessert

Ingredients

  • Sticky rice (1 cup)
  • Coconut milk (1 cup)
  • Sugar (1/4 cup)
  • Salt (1/4 teaspoon)
  • Mango (2, ripe and sliced)
  • Fresh mint leaves (for garnish)
  • Sesame seeds (2 tablespoons, toasted)

Instructions

  1. Rinse the sticky rice under cold water until the water runs clear. Soak the rice in a bowl of water for at least 4 hours or overnight for best results.
  2. After soaking, drain the sticky rice and place it in a steamer basket lined with cheesecloth. Steam the rice over high heat for about 20 minutes or until it is tender and cooked through. Make sure to check occasionally to avoid overcooking.
  3. While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat, stirring until the sugar is fully dissolved and the mixture is warmed through. Do not bring it to a boil. Remove from heat and set aside.
  4. Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Stir gently to coat the rice with the sauce, allowing it to absorb the flavors.
  5. To serve, divide the sticky rice among serving plates. Top each portion with generous slices of fresh mango.
  6. Drizzle the remaining coconut sauce over the mango and sticky rice.
  7. Sprinkle with toasted sesame seeds and garnish with fresh mint leaves for a refreshing touch.
