Mango and Sticky Rice Dessert
This traditional Thai dessert features sweet sticky rice topped with fresh mango slices and a coconut sauce.
Ingredients
- Fresh mint leaves (for garnish)
- Sesame seeds (1 tablespoon)
- Mango (2 ripe, sliced)
- Salt (1/4 teaspoon)
- Sugar (1/4 cup)
- Coconut milk (1 cup)
- Sticky rice (1 cup)
Instructions
- Rinse the sticky rice under cold water until the water runs clear. Soak the rice in water for at least 4 hours or overnight.
- Drain the soaked rice and place it in a steamer basket lined with cheesecloth. Steam the rice over high heat for 20 minutes, or until it is tender and cooked through.
- While the rice is steaming, prepare the coconut sauce. In a small saucepan, combine the coconut milk, sugar, and salt. Heat over medium heat until the sugar is dissolved and the mixture is heated through. Remove from heat and set aside.
- Once the rice is cooked, transfer it to a bowl and pour half of the coconut sauce over it. Stir gently to coat the rice with the sauce.
- To serve, divide the sticky rice among serving plates. Top each portion with sliced mangoes and drizzle with the remaining coconut sauce.
- Sprinkle sesame seeds over the dessert and garnish with fresh mint leaves.
- Serve the mango and sticky rice dessert warm or at room temperature.
