
Mango and Zucchini Bread
This delicious mango and zucchini bread is moist, flavorful, and perfect for breakfast or a snack.
Ingredients
- Chopped walnuts (1/2 cup)
- Zucchini (1 cup, grated)
- Mango (1 cup, diced)
- Vanilla extract (1 teaspoon)
- Granulated sugar (1 cup)
- Vegetable oil (1/2 cup)
- Eggs (2)
- Nutmeg (1/2 teaspoon)
- Cinnamon (1 teaspoon)
- Salt (1/2 teaspoon)
- Baking soda (1/2 teaspoon)
- Baking powder (1 teaspoon)
- All (purpose flour - 2 cups)
Instructions
- Preheat the oven to 350°F and grease a loaf pan.
- In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, beat the eggs, vegetable oil, sugar, and vanilla extract until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Fold in the diced mango, grated zucchini, and chopped walnuts.
- Pour the batter into the greased loaf pan and smooth the top.
- Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
- Slice and serve the mango and zucchini bread.
