Mango
2 ripe, peeled and diced

4, boneless and skinless

Instructions

  1. In a large skillet, heat the cooking oil over medium heat.
  2. Add the chopped onion, minced garlic, and grated ginger. Sauté for about 3-4 minutes, or until the onion is translucent and fragrant.
  3. Stir in the curry powder, turmeric, and cumin. Cook for an additional minute to toast the spices, enhancing their flavors.
  4. Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until browned and cooked through.
  5. While the chicken is cooking, peel and dice the mango.
  6. Once the chicken is browned, add the diced mango, coconut milk, and lime juice to the skillet. Stir well to combine all the ingredients.
  7. Season the mixture with salt and pepper to taste. Stir gently to ensure the chicken is coated with the sauce.
  8. Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes. This allows the chicken to absorb the flavors and the sauce to thicken slightly.
