- Lime juice
- 2 tablespoons
- Coconut milk
- 1 cup
- Ground cumin
- 1 teaspoon
- Ground turmeric
- 1/2 teaspoon
- Curry powder
- 1 tablespoon
- Fresh ginger
- 1 tablespoon, grated
- Garlic
- 3 cloves, minced
- Onion
- 1 medium, chopped
- Mango
- 2 ripe, peeled and diced
- Chicken breasts
- 4, boneless and skinless
Instructions
- In a large skillet, heat the cooking oil over medium heat.
- Add the chopped onion, minced garlic, and grated ginger. Sauté for about 3-4 minutes, or until the onion is translucent and fragrant.
- Stir in the curry powder, turmeric, and cumin. Cook for an additional minute to toast the spices, enhancing their flavors.
- Add the chicken breasts to the skillet and cook for 5-6 minutes on each side, or until browned and cooked through.
- While the chicken is cooking, peel and dice the mango.
- Once the chicken is browned, add the diced mango, coconut milk, and lime juice to the skillet. Stir well to combine all the ingredients.
- Season the mixture with salt and pepper to taste. Stir gently to ensure the chicken is coated with the sauce.
- Reduce the heat to low, cover the skillet, and let it simmer for about 15 minutes. This allows the chicken to absorb the flavors and the sauce to thicken slightly.
- Before serving, garnish with chopped cilantro for a fresh finish.
