Ripe mangoes
3 cups, peeled, pitted, and diced
Granulated sugar
1/4 cup (adjust to taste)
Lime juice
2 tablespoons, freshly squeezed
Water
1/4 cup

Instructions

  1. In a medium saucepan, combine the diced mangoes, sugar, lime juice, and water.
  2. Cook over medium heat, stirring occasionally, until the mangoes soften and the sugar dissolves, about 10-15 minutes.
  3. Once the mixture starts to bubble, reduce the heat and continue to simmer for an additional 5 minutes to thicken slightly.
  4. Remove from heat and allow the compote to cool to room temperature.
  5. Transfer to a serving bowl or airtight container and refrigerate until ready to serve.
  6. Serve the mango compote as a topping for yogurt, ice cream, pancakes, or even as a filling for pastries.
