Ingredients
- Fresh cilantro
- 1/4 cup, chopped
- Salt
- 1/2 teaspoon, to taste
- Pepper

- 1 tablespoon, grated
- Garlic
- 2 cloves, minced
- Soy sauce
- 2 tablespoons
- Honey
- 2 tablespoons
- Lime juice
- 2 tablespoons, freshly squeezed
- Mango
- 1 large, peeled and diced
- Salmon fillets
- 4 (6-ounce) fillets, skin-on
Instructions
- Preheat the oven to 400°F (200°C).
- In a blender, combine the diced mango, lime juice, honey, soy sauce, minced garlic, grated ginger, salt, and pepper. Blend until smooth to create a vibrant mango glaze.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper for easy cleanup.
- Generously brush the mango glaze over the salmon fillets, making sure they are evenly coated. Reserve some glaze for serving, if desired.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
