Servings: 4
Ingredients
- Fresh cilantro (1/4 cup, chopped)
- Salt (1/2 teaspoon, to taste)
- Pepper (1/4 teaspoon, to taste)
- Fresh ginger (1 tablespoon, grated)
- Garlic (2 cloves, minced)
- Soy sauce (2 tablespoons)
- Honey (2 tablespoons)
- Lime juice (2 tablespoons, freshly squeezed)
- Mango (1 large, peeled and diced)
- Salmon fillets (4 (6-ounce) fillets, skin-on)
Instructions
- Preheat the oven to 400°F (200°C).
- In a blender, combine the diced mango, lime juice, honey, soy sauce, minced garlic, grated ginger, salt, and pepper. Blend until smooth to create a vibrant mango glaze.
- Place the salmon fillets skin-side down on a baking sheet lined with parchment paper for easy cleanup.
- Generously brush the mango glaze over the salmon fillets, making sure they are evenly coated. Reserve some glaze for serving, if desired.
- Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
- Remove from the oven and let rest for a couple of minutes before serving.
- Garnish with fresh chopped cilantro to add a burst of flavor and color. Serve with the reserved mango glaze on the side, if desired.
